Warm and inviting, the Meritage restaurant tucked inside the Omni Interlocken Resort & Spa recently underwent a $2 million rejuvenation, and the appointments of new executive chef and chef de cuisine. For patrons, this means an emphasis on dishes with fresh organic and local ingredients served among plush intimate booths and tables surrounding a grand stone fireplace. Dinners feature Colorado lamb, certified Angus beef and wild seafood, accompanied by an extensive wine list. For lunch, diners can choose seasonal daily specials, sandwiches, and salads. Sunday Brunch and breakfast include cooked-to-order stations, weekly entrees, fruit, wide selection of breakfast breads and more.

Rated 5 out of 5 by Kudos to the new chef. This was absolutely our very best Sunday brunch at the Meritage in a year. Everything was perfect - the best lox ever, broccoli rabe w/grated cheese and whole cloves of garlic and mashed sweet potatoes with walnuts, pork belly with a delicious glaze and tasty chicken, an assortment of mouth watering desserts so enticing we wanted to taste all of them. Rated 4 out of 5 by We thought some of the dishes were not executed the right way. The crab caked themselves were great but the plate was way busier than it needed to be. The Colorado lamb was phenomenal but the asparagus was completely unseasoned. The stuffing side that came with the lamb was not very good and was overly rich for how rich the dish was already (lamb doused in fig sauce). The Riesling offered was not very pleasant, tasted almost purely of white grape juice. The creme brulee had a cookie on top that didn't fit the dish at all, but the homemade honey whopped cream was a great touch. Overall the dishes could be less busier with more focus on the main item. I would have enjoyed the creme brulee with a thicker crust and less flair.That being said, the service was fantastic, our waiter was helpful and attentive, and the atmosphere was great (in my opinion). In general the flavors and food quality was great. For the price I expect a bit better execution. I may try lunch here as I hear good things about it.One last thing: the server was almost too attentive. Arrived roughly 10 seconds after the food came (every time) to ask me how it tasted. Rated 5 out of 5 by The head waiter was fantastic. Welcomed us as if it were his own home. He really takes pride in his job and I can tell that he enjoys working for the Omni Hotel. I wish I could remember his name. He is an elderly Hispanic man. There was no other place to put any other comments but I'd like to say that the coffee could be a lot hotter. It was luke warm both mornings we ate there and I personally love my coffee to be hot. Thank you. Dec 24, 2014
Rated 4 out of 5 by I always enjoy dining at Meritage because the food is so good, the ambiance relaxed yet upscale and the service very pleasant. They made a few changes to the menu recently which to me doesn't seem to have been a good thing. Some flavor combinations have reverted to a more traditional rather than the previous innovative style. Our beef today was really excellent as usual though. The crab cakes have been better in the past and didn't seem quite up to Meritage standards though certainly not distasteful in any way. The music seemed a bit off and perhaps lacking in bass tones which gave it a bit of a tinny, less classy feel. Overall though, really enjoyed lunch. Dec 22, 2014
