Restaurant Chef Bio Born and raised in the Tuscany region of Italy, Chef Carlo Croci went on to study with many of the greatest chefs of Italy and Spain. He also studied in a Swiss school in New York. He landed in Fort Worth in the late seventies and after a joint venture with a partner; he opened Bella Italia in 1980. Chef Carlo's creations are constantly evolving. One of the reasons is that he has no written recipes. He believes that writing down constricts a chef's imagination from being able to take each dish and create a flavor all its own. |
