Restaurant Chef Bio The Grille at Riverview in New Smyrna Beach is fast becoming one of the area's top choices for bonafide "foodies," under the helm of Executive Chef Chris Brown, who's innovative tastes are being met with rave reviews. The Northern Maine native and New England Institute graduate's favorite dishes created for The Grille at Riverview include his Macadamia Nut Encrusted Grouper, delicious in name and its obvious description and, The Grille's Java Tuna … an espresso crusted yellow fin fillet served over mashed Yukon gold potatoes with a Prosciutto cream sauce. Rounding out Brown's personal menu picks is a creation of his Sous Chef Michael Kemick: Crispy Skinned Maple Leaf Duck Breast served medium rare with a savory Gorgonzola cheese custard and red onion confit. Influenced by a number of cuisine styles, Brown coins his unique approach to food as "New American," a style also embraced by his culinary team of Kemick, Sous Chef Mathew Keller and Pastry Chef Amanda Riewe. |
