Why 13?
It's simple...really. Once our Chef created a menu featuring timeless American Classics with a contemporary twist, it seemed obvious that we should honor what Philadelphia means, historically, to our nation. Most significantly, the "City of Brotherly Love" was the city in which our Forefathers signed the Declaration of Independence effectively turning 13 ragtag British colonies into these United States. A moment that actually defines a nation - our nation. This document is formally entitled "the unanimous Declaration of the thirteen United States of America." Thirteen may be viewed as an unlucky number by some, but in terms of Philadelphia history and America destiny-13 is just fine by us. Good thing we're not a superstitious lot.
