History and legend say that the Filipinos came from Indonesia and Malaysia. They founded villages and small kingdoms in the 7,000 or so islands which make up the Philippines today. The Philippines also had visits from Chinese traders, Japanese fisherman, and Dutch, Portuguese, and English adventurers. Later, the Spanish colonizers came. Spaniards named the Philippines after their King, John Philip II and kept control of the country for almost 4 centuries until 1898. The Americans came and saved the country from the clutches of Spain. The Philippines obtained their independence from America after 48 years in 1946.

The history of the Philippines holds the interesting secrets of our lovely cooking. In fact, you can say the reflection of our special islands is in every bit of our cooking.

The four major groups that our cooking is harnessed from are Malay, our food is basically of Malay origin; Spain, centuries of Spanish rule have resulted in about 80% Filipino dishes being of Spanish derivation; Chinese, currently the largest ethnic group in the country; American influence. You could see our culture is a valuable ingredient to our food.

Today, Philippine cuisine continues to evolve as new techniques and style of cooking find their way into one of the most active melting pots of Asia.
