Uoko has been family owned and operated in the U.S. since 1985, with its first restaurant located in Lake Forest, California. Trained and groomed in the culinary arts of Japan, Chef Masatoshi(aka Masa-san) was eager to bring his family legacy to the US, with support from his loyal spouse and children. Uoko's original roots lie in Tokyo, Japan, with its cozy but renown fish market. Founded by Seigo-san, father of Masatoshi, who raised all of his sons in the disciplined skill of selecting the freshest and highest quality fish available. Young Masa-san and his brothers spent countless early mornings at the world renown Tsukiji Fish Market, gaining invaluable education and life-long experience.
